The school on Friday chose Jones to replace Chris Pollard after he left last month to take over at Duke.
Jones spent the past eight seasons on the Cowboys' staff. Before that, he was an assistant at North Carolina State from 2002-04, and he also has coached at Oregon State and Arizona State.
